What better on a cold day that a warming bowel of porridge? It’s a meal that isn’t just breakfast in our house but can easily be lunch or even dinner.. home late from a yoga class? Porridge to fill your belly always works for me!
The below serves 2 but can easily be halved or doubled to suit your hungry audience.
- 400ml almond milk
- 2 cups rolled oats
- 2 tbsp cacao nibs
- 2 tbsp of agave / maple / honey – your choice
- 2 tbsp chia seeds
- 1 banana – to serve
- nut butter – to serve
In a small saucepan gently heat the milk over a low heat, once warm add the oats and mix well, whilst its heating peel and slice your banana and set to one side.
Keep stirring the pan for a couple of minutes until the milk is well heated (but not bubbling) and the oats are softened then add the chia seeds and your choice of natural sweetener and mix well.
Split between two bowls and top with sliced banana, cacao nibs and a blob of your chosen nut butter, my choice is always Pip & Nut coconut & almond for being so creamy!
