Onion Bhaji’s

I’ve enjoyed cooking ever since I was 18 and over the last 6 or 7 years both myself & Dan have really enjoyed experimenting with different cuisines, Indian being the latest that we’ve tackled after falling in love with some of the simple yet delicious staples whist in the mother land. Whilst we’ve been cooking ‘curries’ for years and I’ve even mastered chapati’s and pilau rice, we’ve always been scared of bhaji’s, they always seemed like they’d be fiddly and difficult but I have so much thanks to the guys over at Bosh for introducing us to this one, so easy and soooo tasty!! I’ve made a couple of tweaks and halved the quantity as the below is best for 2 people having it as a side.

What You’ll Need – Makes Approx. 6

  • 1 large white onions
  • 1 garlic clove
  • 2-3cm fresh ginger
  • 1/2 fresh red chilli
  • 10g fresh coriander
  • 150g gram flour
  • 50g sweetcorn
  • 1/2 tbsp nigella seeds
  • 1/2 tbsp ground coriander
  • 1/2 tbsp ground cumin
  • 1/2 tbsp salt
  • 1/2 tbsp garam masala
  • 1/2 tsp fenugreek (optimal)
  • 1/2 tsp ground turmeric
  • 100ml water
  • Vegetable oil – for deep frying
